These sweet, delicious brownie cookies are easy to make! They take less than 15 minutes to prepare all the layers, 12 minutes to bake the cookies and once all finished, less than 20 seconds to devour each cookie. Yes, I timed it. 😉 Like these Chocolate Chip Cookie Dough Frosted Brownies.
These amazing rich, thick, fudgy brownie cookies are stuffed with irresistible Edible Chocolate Chip Cookie Dough and then topped with glorious chocolate.
You can make them 2 other ways as well, with Peanut Butter Dough or Nutella Cookie Dough in the recipe instructions. So make them your way! I love giving you other options and you may have your own twist you want to use!
I used a shortcut by using a boxed brownie mix to make the cookies, but you can also use your favorite brownie cookie recipe, no worries! Who’s ready for some cookie dough brownie bliss?
Ingredients You Need
Brownie Cookies
- fudge brownie mix
- butter
- cream cheese
- egg
Edible Chocolate Chip Cookie Dough Filling
- unsalted butter
- brown sugar
- granulated sugar
- almond milk milk or cream
- vanilla extract
- all-purpose flour – Raw flour can cause stomach issues so it’s better to heat treat your flour before making edible cookie dough to be safe. Heat treat your flour by placing it in a microwave safe bowl and heating on high for 50-60 seconds until the internal temperature reaches 166°F.

- semisweet or milk chocolate chips
How to Make Chocolate Chip Cookie Dough Cookies
Brownie Cookies
- Heat oven to 350 degrees. In a medium bowl, beat the brownie mix, butter, cream cheese, and egg.
- Scoop the dough using a large cookie dough scoop onto parchment paper.
- Bake cookies for 12 minutes.
Cookie Dough Filling
- Raw flour can cause stomach issues so it’s better to heat treat your flour before making edible cookie dough to be safe. Heat treat your flour by placing it in a microwave safe bowl and heating on high for 50-60 seconds until the internal temperature reaches 166°F. Set aside.
- In a separate bowl, using mixer, cream butter and sugars in a bowl, until smooth.
- Add milk, salt and vanilla and mix until well combined, then add in flour and again mix well.
- Fold in the mini chocolate chips and roll into 1/2 inch balls and flatten into discs.
- Let cookies cool about 5 minutes, then add the cookie dough disc on top. The mixture will soften slightly, which is fine.
- Transfer cookies to a wire rack to cool completely.
Chocolate Topping
- Melt chocolate chips in a microwavable bowl for 45 seconds. Stir the chocolate and melt for additional 15 seconds or until the chocolate is completely melted.
- Spoon about ½ a tablespoon of melted chocolate on top of each cookie so it covers the cookie dough partially or cover the all the cookie dough for a surprise inside!
- Add some sprinkles for special occasions or some sea salt if you love sweet and salty!
- Let the chocolate set. Store in an airtight container for up to 3-4 days.
How to Make Cookies with Other Fillings
Peanut Butter Or Nutella Filling
- 1 cup powdered sugar
- 1 cup creamy peanut butter or Nutella
- Optional: Add chocolate chips or peanut butter chips for extra yum!
How to Make Peanut Butter Or Nutella Filling
- In a separate bowl, mix the powdered sugar and the peanut butter or Nutella until it is completely combined. Form the mixture into about 1/2 inch balls/disc and set aside (You can also use a small cookie scoop to place peanut butter dough on top of cookies)
- Once the cookies have baked, press a peanut butter or Nutella ball/disc lightly into the center of each cookie. The mixture will soften slightly, which is fine.
Let the cookies cool for 5 minutes, then transfer them to a wire rack to cool completely.

Ingredients
Brownie Cookies
- 1 19.5 ounce or family size box fudge brownie mix
- ¼ cup butter melted
- 4 oz cream cheese 1/2 block, softened
- 1 large egg
Cookie Dough Filling
- ½ cup unsalted butter softened
- ¾ cup brown sugar
- 2 tablespoons granulated sugar
- 2-4 tablespoons almond milk milk or cream
- 1 teaspoon vanilla extract
- 1 ¼ cup all-purpose flour Heat treat your flour by placing it in a microwave safe bowl and heating on high for 50-60 seconds until the internal temperature reaches 166°F.
- ½ teaspoon salt
- ½ cup mini chocolate chips or 1/2 cup reg chocolate chips depending on what texture of chocolate chips you want
Chocolate Topping
- 12 oz bag of semisweet or milk chocolate chips
- Optional sea salt on top
